I have noticed that some hispanics say "doble u" and also some others say "doble v". Which one is the correct one? In english we say double u, not double v.

Just because your key-board is a dual v, it does not indicates that it has to be a twin v. When I create it I create it favor a uu. Double v is even more germanic, favor VolksWagen (W sounds prefer V). In english it sounds prefer U as in Work.

In spanish we bacount usage it, a lot of of the words are "anglicismos" (words that come from English) prefer Wyoming, Wafles. Etc. And some local indigenous words prefer wachuma.

So we deserve to say that in spanish it greatly sounds prefer a twin u.
